Ingredients:                                                                       

NZ Gourmet Gift Creamy Texan Moppin BBQ Sauce

1kg pork spare ribs
1 tbls honey
1 teaspoon chilli powder (optional)
3 trimmed corn cobs
2 medium tomatoes (seeded & chopped finely)
1 long green chilli, chopped finely
1 medium red onion, chopped finely
1 med green capsicum, (remove seeds, chop)
¼ cup coarsely chopped fresh coriander
2 tablespoons lime juice
1 tablespoon olive oil

Combine NZ Gourmet Gift Texan Moppin BBQ Sauce, honey & chilli powder in a large bowl; add ribs, mix well.

Cover & refrigerate for 3 hours or overnight. Place ribs in disposable baking dish.  

Cook in covered barbeque, using indirect heat for approx. 45 mins or until ribs are tender.  During cooking, brush ribs occasionally with pan juices.    

Meanwhile, cook corn on heated oiled grill plate, uncovered, until tender.  When cool enough to handle, cut kernels from cobs.  

Place kernels in medium bowl with remaining ingredients; toss salsa gently to combine.

Serve with pork or lamb spare ribs.
