Cheesy Corn Fritters with Beetroot & Horopito Pickle

Ingredients:

NZ Gourmet Gift Beetroot & Horopito Pickle 

500g self-raising flour
150ml milk
1 egg
75g Tasty cheese
75g Gruyere cheese
75g Herbed cheese
1 cob of fresh corn,
1 small brown onion, finely chopped
3tblesps butter
30g rocket

Peel the corn and poach in hot water until done. When
cool, cut the corn off the cob.
In a mixing bowl combine the flour, milk and eggs to
make a pancake batter consistency. Chop or grate the
cheeses and add into the mix together with the corn &
onion. Melt the butter in a pan and make pancake sized
fritters. Arrange the fritters on plates, garnish with the
rocket and a generous serving of
Beetroot & Horopito Pickle.
